Ingredients
Spaghetti
Bacon (streaky smoked preferred)
Olive oil
Garlic
Onion
Canned tomatoes
Parmesan cheese
Black pepper
Salt
Pasta water (reserved)
Heavy cream or cream cheese (optional for creamy sauce)
Pecorino Romano cheese (optional)
Fresh parsley (for garnish)
Instructions
1. Boil a pot of salted water and cook the pasta until al dente, then reserve some pasta water before draining.
2. Cut the bacon into small pieces and cook in a large pan over medium heat until crispy, then remove and set aside.
3. In the same pan, add chopped onion and garlic, cooking until soft and fragrant.
4. Add canned tomatoes (or cream for a creamy version) and stir, letting it simmer for a few minutes.
5. Return the crispy bacon to the pan and mix well.
6. Add the drained pasta to the pan, tossing to combine with the sauce.
7. If needed, pour in reserved pasta water a little at a time to make the sauce silky.
8. Stir in grated Parmesan cheese and season with black pepper to taste.
9. Garnish with fresh parsley and extra Parmesan cheese before serving.
10. Serve immediately and enjoy!
