Ingredients
All-purpose flour (one-third of the flour ratio)
Fine yellow cornmeal (two-thirds of the flour ratio)
Brown butter
Sugar
Lime zest sugar (lime zest mixed with sugar)
Lime juice glaze (lime juice mixed with sugar)
Optional: citric acid powder for extra tartness
Instructions
1. Melt butter in a saucepan over low heat, stirring, until it turns a rich brown with dark flecks. Be careful not to burn. Set aside to cool.
2. In a bowl, whisk together the all-purpose flour, fine yellow cornmeal, baking soda, and salt.
3. In another bowl, combine sugar with the cooled brown butter. Add a room temperature egg and vanilla extract, mixing until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
5. Form the dough into balls. Roll them in lime zest sugar before baking or coat them with sugar after baking for added texture.
6. Chill the dough for at least 30 minutes. Meanwhile, preheat the oven to 350Β°F (175Β°C).
7. Arrange dough balls on a parchment-lined baking sheet, using a cookie scoop or ΒΌ cup measuring cup for even sizes.
8. Bake for 10 to 12 minutes. Allow cookies to set on the baking tray after removing from the oven.
9. For added citrus brightness, drizzle with lime juice glaze post-baking, and optionally sprinkle with lime zest or additional lime zest sugar.
