Ingredients
1.5 lb sirloin steak, sliced thinly against the grain
1 tablespoon soy sauce
1 teaspoon dark soy sauce
2 garlic cloves, finely minced
1 teaspoon fresh grated ginger
1 cup corn starch (corn flour)
Oil for deep frying
1/3 cup honey
3 tablespoons soy sauce
1 tablespoon hoisin sauce
2 tablespoons Chinese Shaoxing wine or mirin
2 tablespoons white vinegar
5 garlic cloves, finely minced
2 teaspoons fresh grated ginger
1 teaspoon chili flakes (optional)
Sesame seeds
Spring onions (green onions), finely sliced
Instructions
Combine steak slices with soy sauces, garlic, and ginger. Marinate for 10 minutes.
Heat vegetable oil in a large pan or wok over high heat until small bubbles form around a wooden spoon.
Toss marinated beef in corn starch, shaking off excess. Fry in hot oil in batches for 3-4 minutes until golden and crispy. Drain on paper towels.
In a clean frying pan, combine honey, soy sauce, hoisin, wine/mirin, vinegar, garlic, ginger, and optional chili flakes. Simmer for 2 minutes until slightly thickened.
Toss crispy beef in the sauce to coat evenly. Serve over rice or noodles, garnished with sesame seeds and spring onions.
