1 tsp salt
½ tsp black pepper
2 tbsp avocado or olive oil
4 tbsp salted butter, softened
2 tsp minced garlic
1 tsp prepared horseradish or Dijon mustard
1 tsp minced rosemary or thyme


Instructions

1. Trim the beef tenderloin, cut it into two pieces, and tie with butcher’s twine for even cooking.
2. Season the tenderloin with salt and pepper, then optionally leave it uncovered in the fridge overnight for enhanced flavor and crust formation.
3. Remove the tenderloin from the fridge and allow it to come to room temperature for 1 to 2 hours before cooking.
4. Preheat the oven to 425°F.
5. Heat avocado or olive oil in a large cast-iron skillet over medium-high heat.
6. Sear the beef tenderloin on all sides for 3 to 5 minutes until a golden-brown crust forms.
7. In a separate bowl, mix softened butter with minced garlic, horseradish or Dijon mustard, and minced rosemary or thyme to create a butter mixture.
