Instructions

1. Preheat oven to 350°F and coat a baking sheet or au gratin dishes with cooking spray.
2. In a bowl, mix Parmesan cheese, mayonnaise, butter, chopped green onions, Worcestershire sauce, and a few dashes of Tabasco to create a butter mixture.
3. Season Delacata catfish fillets with salt and pepper.
4. Spread the butter mixture evenly over the top of each catfish fillet.
5. Bake in the preheated oven for 25-30 minutes until the fish is cooked through.
6. Turn the oven to broil and cook for an additional 2-3 minutes until the top is golden brown.
7. Remove from the oven and let it rest for a couple of minutes before serving.
8. Serve hot with dirty rice or hushpuppies for an authentic Mississippi Delta experience.

Notes

For a crispier texture, add a layer of panko breadcrumbs on top of the butter mixture before baking.

Let the catfish rest for a few minutes after baking to allow the flavors to settle before serving.

Pair with classic Southern sides like dirty rice or hushpuppies for a complete Mississippi-inspired meal.
