Ingredients
1 lb boneless, skinless cubed chicken
2 tablespoons butter
2 cloves minced garlic for chicken
1/2 tablespoon Italian seasoning
1 lb penne pasta
4 tablespoons butter for sauce
2 cloves minced garlic for sauce
1/4 cup all-purpose flour
1 tablespoon salt
3/4 teaspoon pepper
2 cups milk
1 cup half-and-half
3/4 cup grated Colby Jack cheese
8 ounces grated Parmesan cheese
3 jalapeno peppers, sliced
Instructions
1-Melt butter and cook garlic with seasoning.
2-Cook chicken until done and set aside.
3-Prepare pasta to just shy of al dente.
4-Make the roux and add milk mixture.
5-Melt in cheeses and combine with chicken and jalapenos.
6-Toss with pasta and serve.
