Ingredients
2 cups all-purpose flour
1 cup granulated sugar
3/4 cup extra-virgin olive oil
3 large eggs
1/2 cup Greek yogurt
1 tablespoon citrus zest (from oranges, lemons, or blood oranges)
1/2 cup citrus juice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup powdered sugar
Roasted pistachios for garnish (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease your chosen baking pan (loaf or Bundt).
2. In a large bowl, combine flour, baking soda, baking powder, and salt. Set aside.
3. In another bowl, rub citrus zest into granulated sugar until it resembles damp sand.
4. Whisk in the eggs, followed by Greek yogurt and olive oil, mixing until smooth.
5. Gradually add citrus juice to the wet mixture, ensuring a smooth blend.
6. Carefully fold the dry ingredients into the wet mixture, mixing just until combined.
7. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
9. For the glaze, combine powdered sugar with reserved citrus juice and drizzle over the cooled cake.
10. Sprinkle with roasted pistachios if desired, allowing the glaze to set before serving.
Notes
🧂 Choose a fruity or peppery extra-virgin olive oil for optimal flavor enhancement in the cake.
🥄 Experiment with mix-ins like roasted nuts or chocolate chips for added texture and flavor variety.
🧁 For a lighter cake texture, consider folding in whipped egg whites before baking.
