Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
2. Pierce whole sweet potatoes with a fork and place them directly on the baking sheet for roasting to keep the skin crispy.
3. Roast for 40 to 50 minutes until the skin puffs and the inside is tender. For faster cooking, halve the sweet potatoes, coat with olive oil, salt, and pepper, and roast cut-side up for about 30 minutes.
4. Serve with butter, salt, pepper, and toppings of your choice.
