Ingredients
– 3 cups Cooked, shredded chicken
– 2 cups Shredded cheese (mild Jack or a spicier variety)
– 2 cans Refried beans (each 16 oz)
– 3 cups Fresh guacamole
– Small tortillas enough for 20 rolls (flour or corn, depending on dietary needs)
– salsa and/or sour-cream (optional for serving)
Instructions
1-First, gather everything: shred that cooked chicken and measure out your guacamole, cheese, refried beans, and tortillas.
2-Next, in a big bowl, mix the shredded chicken with any spices you fancy, making sure it’s all coated evenly this is where the flavor magic starts.
3-Then, lay out your tortillas on a counter, and spoon on about 2 3 tablespoons of refried beans down the center, followed by the same amount of guacamole, a sprinkle of cheese, and a handful of chicken.
4-Roll each one up tight, place them seam-side down on a greased baking sheet, and pop them in the oven preheated to 425°F (218°C). Bake for 15 20 minutes until they’re crispy and golden oh, and don’t forget to give them a light spray or brush of butter for that extra crunch.
5-Once they’re done, pull them out and serve right away with salsa or sour-cream on the side.
Notes
🧀 Keep at least a ½‑inch border of tortilla uncovered so the roll can expand while baking.
🌶 Swap the mild cheese for a spicier variety like pepper jack for added heat.
🚀 Use pre‑cooked rotisserie chicken to speed up prep and add flavor.
