๐ŸŒฐ Almond Cake with Figs and Honey offers a naturally sweet and moist dessert featuring fresh figs and aromatic almond flour.
๐Ÿฏ This elegant cake is perfect for special occasions or a refined treat, pairing beautifully with honey and creamy accompaniments like Greek yogurt.

  • Total Time: 1 hour 40 minutes
  • Yield: 8-10 servings 1x

Ingredients

Scale

Softened unsalted butter and granulated sugar for the pan

1 cup all-purpose flour

1/2 cup almond or hazelnut flour

1 teaspoon baking powder

3/4 teaspoon kosher salt

1 1/2 sticks unsalted butter at room temperature

3/4 cup plus 2 tablespoons granulated sugar, divided

1/2 vanilla bean pod split lengthwise

2 large eggs

1/3 cup Greek yogurt or sour cream

1 pound fresh figs halved or quartered if large (alternatively rhubarb or pears cut similarly, avoiding overly juicy fruit)

Instructions

1-Getting started with this almond fig cake is straightforward and fun, beginning with preheating your oven to 350ยฐF. First, butter a 9-inch tart pan with a removable bottom and sprinkle it with sugar, tapping out any excess to create a non-stick surface. Next, whisk together the all-purpose flour, almond or hazelnut flour, baking powder, and kosher salt in a bowl to blend the dry ingredients evenly.

2-Now, beat the unsalted butter at room temperature with 3/4 cup of the granulated sugar until itโ€™s light and fluffy, which usually takes a couple of minutes. Add the seeds from the 1/2 vanilla bean pod and blend them in for that aromatic touch. Then, incorporate the eggs one at a time, beating until the mixture turns pale and fluffy, which helps build the cakeโ€™s structure.

3-On low speed, mix in the flour mixture along with the Greek yogurt or sour cream just until combined, being careful not to overmix. Fold in half the prepared figs gently. Pour the batter into the pan, arrange the remaining figs on top, and sprinkle with the remaining 2 tablespoons of granulated sugar for a caramelized finish. Place the pan on a sheet pan and bake for 65 to 75 minutes, rotating once halfway through, until golden and the figs are browned. Let it cool completely before removing from the pan to avoid crumbling.

Notes

๐Ÿฝ๏ธ Cake can be made up to four days ahead and stored tightly wrapped at room temperature.
๐ŸŽ Use firmer fruits like figs, rhubarb, or pears to avoid excess moisture during baking.
๐Ÿธ Save vanilla bean pods to infuse in vodka for a homemade flavored spirit.
