1 cup plus 2 tablespoons cake flour
1/4 teaspoon salt
12 large egg whites at room temperature
1 and 1/2 teaspoons cream of tartar
1 and 1/2 teaspoons pure vanilla extract
Confectioners’ sugar for dusting

Instructions
1-Start by preheating your oven to 325°F and preparing an ungreased 9 or 10-inch tube pan, as this helps the batter rise properly.
2-Divide the sugar and process part of it to a superfine consistency for better texture and structure in the cake.
3-Combine the cake flour with some of the sugar and salt before gently folding it into the beaten egg whites.
4-Whip the 12 large egg whites at room temperature with the cream of tartar until they reach soft peaks, then add the vanilla extract for flavor.
5-Pour the batter evenly into the pan, smooth the top, and bake for 40-45 minutes, rotating the pan halfway through for even cooking.
6-After baking, cool the cake upside down for about 3 hours to keep its shape, then release it by running a knife around the edges.
7-When serving, dust with confectioners’ sugar and pair with fresh berries or whipped cream for a tasty finish.
