Instructions
1-Preheat the oven: Set to 350Β°F (175Β°C). Grease a loaf pan or line with parchment for easy release.
2-Mix the base batter: In a large bowl, combine melted salted butter, vanilla Greek yogurt, eggs, brown sugar, vanilla extract, cinnamon oat pancake mix, and maple syrup. Stir until smooth and lump-free.
3-Fold in apples: Gently add chopped peeled apples. Avoid overmixing to keep those chunks intact for texture.
4-Fill the pan: Pour batter into the prepared loaf pan. Smooth the top lightly.
5-Bake to golden perfection: Cook for 40 to 45 minutes. A toothpick in the center should come out clean. Ovens vary, so check at 40 minutes.
6-Cool the loaf: Let it rest in the pan for 10 minutes, then transfer to a wire rack.
7-Make the glaze: Whisk powdered sugar, whole milk, and ground cinnamon until smooth. Drizzle or spread over cooled bread.
