2 eggs

2 large Granny Smith or Honey Crisp apples, peeled, cored, and diced

2 cups powdered sugar

1/4 cup milk

1/2 teaspoon vanilla extract

Instructions

1-First, in a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Create a well in the center and add the milk, eggs, and applesauce, stirring just until combined. Gently fold in the diced apples to keep the batter light and airy.

2-Next, heat 1 1/2 inches of oil in a heavy skillet or Dutch oven to 375Β°F (190Β°C). This step is crucial for that golden crispness, so use a thermometer to check the temperature.

3-Dropping and Frying the Batter: Drop about 1/4 cup of batter per fritter into the hot oil, spreading it slightly for even cooking. Fry each side for around 2 minutes until golden brown, making sure not to overcrowd the pan.

4-Once done, use a slotted spoon to remove the fritters and let them drain on paper towels. Then, whisk together the powdered sugar, milk, and vanilla for the glaze, and dunk each fritter to coat both sides before letting them dry on wire racks.

5-Prepare ingredients by peeling and dicing the apples.

6-Mix dry ingredients in a bowl.

7-Combine wet ingredients and fold in apples.

8-Heat oil and fry the batter.

9-Drain and glaze the fritters.
