Ingredients

– 300 g all-purpose flour for the crust

– 60 g granulated sugar for the crust

– 1 tsp salt for the crust

– 220 g cold unsalted butter, cubed for the crust

– 110 g water for the crust

– 1 kg apples (varieties such as Pink Lady, Royal Gala, or Fuji recommended) for the filling

– 75 g unsalted butter for the filling

– 190 g brown sugar for the filling

– 1¼ tsp ground cinnamon for the filling

– 1¼ tbsp cornstarch for the filling

– ¼ tsp salt for the filling

– 2½ tbsp water for the filling

– 5 tbsp almond flour or finely ground nuts or breadcrumbs for assembling

– 1 egg for painting

– 1 tbsp water for painting

– 3 tbsp brown sugar for painting

– Vanilla ice cream or preferred flavor for serving

Instructions

1-Combine the dry ingredients: First, combine the flour, sugar, and salt in a large bowl, then add the cold butter cubes and mix until about half the mixture forms small pieces. Add water and knead gently until dough forms, then refrigerate it for 30 minutes up to 2 days, or even freeze for up to 2 months for later use.

2-Prepare the apple filling: Next, peel, core, and slice the apples to about 5 mm thick. In a saucepan, mix the apples with butter, brown sugar, cinnamon, cornstarch, salt, and water, cooking over medium heat until the liquid thickens to a honey-like consistency, then cool it completely. This step ensures the filling holds together nicely and enhances the overall flavor of your Apple Pie A La Mode.

3-Assemble the pie crust and filling: Reserve one-third of the dough for the lattice and keep it chilled. Roll the rest to about 3 mm thickness and fit it into your pie or tart pan, sprinkling almond flour on the base to prevent sogginess. Pour the apple filling over it evenly. For the top, roll the reserved dough to 2 mm thickness, cut into 2 cm strips, weave them over the filling, trim excess, fold under edges, and crimp to seal.

4-Bake the pie: Brush the lattice and edges with a mixture of beaten egg and water, then sprinkle with brown sugar for a nice finish. Cover the edges with foil and bake at 180°C (350°F) for 30 minutes, then remove the foil and bake another 30 minutes until the crust turns golden and the filling bubbles. Let it cool slightly before serving each slice with a large scoop of ice cream, creating that classic Apple Pie A La Mode experience.
