Ingredients
– 1 1/4 pounds ground sirloin
– 4 slices bacon, diced
– 2 green onions, sliced (white and part of green)
– 1 tablespoon chili powder
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1 teaspoon hickory liquid smoke
– 6 tablespoons ketchup
– 3 teaspoons mustard
– 1 1/2 teaspoons mayonnaise
– 12 small white corn taco shells
– Shredded sharp cheddar cheese for toppings
– Lettuce for toppings
– Tomato for toppings
– Onion for toppings
Instructions
1-Cook the diced bacon in a saucepan over medium heat until itβs lightly crisp, then pour off most of the grease, leaving about half a tablespoon for flavor.
2-Add the ground sirloin and sliced green onions to the same saucepan, cooking until the beef is fully done and no pink remains.
3-Stir in the chili powder, salt, pepper, and hickory liquid smoke, letting everything simmer together for an extra 10 minutes to blend the flavors.
4-In a small bowl, mix the ketchup, mustard, and mayonnaise to create the taco sauce.
5-Fill the 12 small white corn taco shells with the bacon-beef mixture.
6-Drizzle the prepared taco sauce over the filling in each shell.
7-Sprinkle shredded sharp cheddar cheese on top of the mixture.
8-Heat the assembled tacos in an oven or microwave until the cheese melts perfectly.
9-Add lettuce, tomato, and onion as desired right before serving for a fresh finish.
