Ingredients

– 12 ounces good quality chocolate

– β…” cup full-fat heavy whipping cream

– β…“ cup Irish Cream liqueur

– 2 tablespoons butter

– 3 ounces sprinkles

Instructions

1-Finely chop the 12 ounces of good quality chocolate and place it in a medium heat-proof bowl.

2-Cut the 2 tablespoons of softened butter into small pieces and add it to the chocolate.

3-Heat the β…” cup of heavy cream until just boiling, then remove from heat.

4-Pour the hot cream over the chocolate and butter; let it sit for one minute to melt, then whisk until smooth.

5-If needed, heat in 15-second intervals to melt any remaining chocolate chunks.

6-Stir in the β…“ cup of Irish Cream liqueur; the ganache will thicken as you mix.

7-Pour the ganache into a shallow dish, smooth it out, and refrigerate for at least two hours or until firm.

8-Place the 3 ounces of sprinkles in shallow bowls.

9-Use a small scoop or spoon to form the ganache into balls, roll them smooth by hand, then coat with sprinkles.

10-Place the finished truffles on a parchment-lined baking sheet and refrigerate until serving.
