🍳 This recipe combines savory sausage, fluffy eggs, and melty cheese wrapped in soft tortillas for a fuss-free breakfast that’s perfect for the whole family.

Ingredients

– 1/2 pound ground sausage (or substitute with bacon or a vegan meat alternative)

– 1/2 sweet onion, diced

– 6 eggs

– 1/2 cup yogurt (Greek or any type; cottage cheese can also be used)

– Sea salt and black pepper to taste

– 1 cup shredded cheese (cheddar or Mexican blend)

– 6 flour or corn tortillas, at room temperature or warmed

– Cooking oil for skillet and greasing the baking sheet

Instructions

1-Heat oil in a large skillet over medium heat, add diced onion, and cook until browned.

2-Add ground sausage, crumble while cooking for 5-7 minutes, drain excess fat, then remove from heat.

3-Whisk together eggs, yogurt, salt, pepper, and any preferred spices. Cook in the skillet, scrambling softly, then remove from heat.

4-Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

5-Lay tortillas on a greased baking sheet.

6-Spread cheese over half of each tortilla, add sausage, then eggs, and top with more cheese.

7-Fold the tortillas over to seal, repeating for all tortillas.

8-Drizzle oil or use cooking spray over the tacos.

9-Bake in the oven for 10-12 minutes until crispy. For a pressed effect, place another baking sheet on top.

10-Serve warm with optional toppings like guacamole, salsa, and sour cream.
