Ingredients
– 4 boneless, skinless chicken breasts
– 3 Tbsp unsalted butter, melted
– 1/3 cup low-sodium chicken broth
– 4 Tbsp fresh lemon juice (or bottled)
– 1 Tbsp honey
– 2 tsp minced garlic (fresh or jarred)
– 1 tsp Italian seasoning (or Herbs de Provence)
– 1 tsp salt (adjust to taste)
– 1/4 tsp freshly ground black pepper (adjust to taste)
– fresh rosemary sprigs and lemon slices for garnish
Instructions
1-Preheat the oven to 400°F (200°C). Lightly grease a baking sheet or shallow dish with cooking spray to prevent sticking and ensure even cooking.
2-In a large skillet over medium-high heat, melt the butter. Add the chicken breasts and brown each side for 2-3 minutes. Once done, transfer the browned chicken to the prepared pan for baking.
3-In a small bowl, whisk together the chicken broth, lemon juice, honey, garlic, Italian seasoning, salt, and pepper. Pour this sauce over the chicken to infuse it with flavor.
4-Bake for 20-30 minutes, adjusting the time based on the thickness of the breasts. Every 5-10 minutes, baste the chicken with the pan juices to keep it moist and tender.
5-Remove from the oven, let it rest for a moment, then garnish with rosemary and lemon slices if you like, and serve it up hot.
Notes
🧈 Brown the chicken briefly before baking to develop extra flavor and a golden crust.
🍋 For an intensified citrus zing, marinate the chicken in lemon juice, olive oil, and a pinch of salt for up to 2 hours before cooking.
❄️ Store leftovers in an airtight container; reheating covered with foil at 350 °F (175 °C) for 15‑20 minutes retains moisture.
