Ingredients
– 4 small to medium-sized zucchini, quartered lengthwise
– 1/2 cup freshly grated Parmesan cheese
– 1/2 teaspoon dried thyme
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried basil
– 1/2 teaspoon dried rosemary, crumbled
– 1/4 teaspoon garlic powder
– Kosher salt and freshly ground black pepper to taste
Instructions
1-Preheat oven to 350Β°F. Spray a baking rack with cooking spray and place it on a baking sheet.
2-Combine Parmesan, thyme, oregano, basil, rosemary, garlic powder, salt, and pepper in a bowl.
3-Spread the Parmesan-herb mixture onto a plate.
4-Place zucchini on the rack. Drizzle with olive oil and brush evenly, or use olive oil spray to coat.
5-Press each zucchini stick into the Parmesan-herb mixture on the plate to coat the cut sides thoroughly.
6-Return coated zucchini to the rack and bake for 15 minutes until tender.
7-Remove from oven, sprinkle any remaining mixture over the zucchini, then broil for 3 4 minutes until golden brown.
