🍀 This easy baked shrimp scampi recipe offers a quick, flavorful meal perfect for busy weeknights or entertaining.
πŸ‹ With simple ingredients and minimal prep, it brings bright lemon and garlic flavors in a healthy, light dish.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

– 1 pound shrimp, peeled and deveined

– 3 cloves garlic, minced

– Juice of 1 lemon

– 1/4 cup dry white wine

– 1/4 cup panko breadcrumbs

– 2 tablespoons light butter, softened

– Kosher salt, to taste

– Pepper, to taste

– Olive oil spray, for lightly spraying

Instructions

1-First, preheat your oven to 425Β°F (220Β°C) and prepare a baking dish by lightly spraying it with olive oil. This sets the stage for even cooking and helps the flavors meld together nicely.

2-Next, arrange the 1 pound of peeled and deveined shrimp flat in the baking dish and season with kosher salt and pepper to taste. Pour the juice of 1 lemon and 1/4 cup dry white wine over the shrimp, then sprinkle 3 cloves of minced garlic on top for that aromatic punch.

3-In a separate bowl, mix 2 tablespoons of softened light butter with 1/4 cup panko breadcrumbs until the mixture resembles wet sand, and spread it evenly over the shrimp for a crispy topping.

4-Bake for 15 minutes, or until the shrimp is cooked through and opaque. For added freshness, garnish with herbs like parsley or basil before serving. You can serve it over spaghetti, with potatoes and a vegetable, or alongside rice for a complete meal.

Notes

🦐 Use fresh or properly defrosted shrimp for best texture and flavor.
🍽️ Leave shrimp tails on for a nicer presentation, or remove if preferred.
⏲️ Defrost frozen shrimp by submerging in cold water for 30 minutes, changing water as needed for quick thawing.
