Ingredients
2 cups all-purpose flour
1 tablespoon all-purpose flour for coating blueberries
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
1/4 cup softened butter
1 cup mashed ripe bananas
2 eggs
1/3 cup vanilla or plain yogurt
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries

Instructions
1-In a medium bowl, mix 2 cups of all-purpose flour, 3/4 teaspoon baking soda, and 1/2 teaspoon kosher salt. This dry mix forms the base of your loaf.
2-In a larger bowl, beat 1 cup granulated sugar and 1/4 cup softened butter until fluffy, which takes about 1 minute.
3-Add 1 cup mashed ripe bananas, 2 eggs, 1/3 cup vanilla or plain yogurt, and 1 teaspoon vanilla extract; beat until everything combines smoothly.
4-Gradually add the dry mixture to the wet ingredients, beating at low speed until just moist. Avoid overmixing to keep the loaf tender.
5-Toss 1 1/2 cups fresh blueberries with 1 tablespoon flour to prevent sinking, then fold them gently into the batter.
6-Pour the batter into an 8 1/2 by 4 1/2-inch loaf pan coated with cooking spray, and press extra blueberries on top for a nice look.
7-Bake for 60 to 70 minutes, or until a wooden pick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then move to a wire rack to cool completely.
