Instructions

1-Preheat and Prep: Set your oven to 350°F. Grease and flour the loaf pan to prevent sticking. While it heats, lightly roast walnuts in a skillet, stirring constantly until fragrant. Chop them and let cool. This step boosts nut flavor without burning.

2-Cream Butter and Sugar: In a mixing bowl, beat the room-temperature butter and sugar (or honey) until light and fluffy. Use a hand mixer or spoon for 2-3 minutes. This creates air pockets for tenderness in your moist banana bread.

3-Mash and Mix Bananas: Mash the 3 very ripe bananas with a fork to a chunky applesauce texture. Add to the butter mixture along with lightly beaten eggs. Stir until just blended, avoiding overmixing to keep it light.

4-Combine Dry Ingredients: In another bowl, whisk 1 ½ cups flour, 1 teaspoon baking soda, and ½ teaspoon salt. Fold this into the wet banana batter gently. Lumps are okay; they ensure a soft crumb.

5-Add Flavor and Pour: Stir in ½ teaspoon vanilla extract, plus chopped walnuts and raisins if using. Pour batter into the prepared pan, smoothing the top. Tap to release air bubbles.
