– 1 1/2 cups all-purpose flour (180g)

– 2/3 cup sugar (113g)

– 3 medium ripe bananas (or 1 cup mashed banana)
– 1/3 cup melted butter, slightly cooled (75g)
– 1 large egg
– 1 teaspoon vanilla extract (5ml)
Instructions
1-Preheat oven to 375°F (190°C) and line a muffin tin with paper liners to get things ready for baking.
2-In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 2/3 cup sugar; set this aside for later.
3-In a separate large bowl, mash 3 medium ripe bananas with a fork, then add 1 large egg, 1/3 cup melted butter that has cooled slightly, and 1 teaspoon vanilla extract; mix well to combine.
4-Gently fold the dry ingredients from the medium bowl into the wet mixture until just combined, being careful not to overmix.
5-Fold in 1 cup semisweet chocolate chips until they’re evenly distributed throughout the batter.
6-Spoon the batter into the prepared muffin liners, filling them as needed, and top with extra chocolate chips if you like.
7-Bake for 17 to 20 minutes, or until a toothpick inserted into the center comes out clean; let them cool before enjoying.

🍌 Use overripe bananas for best flavor and sweetness; underripe bananas create lumpy batter.
