Ingredients

– 12 slider buns (split)

– 4 cups cooked shredded chicken

– 1 cup BBQ sauce (plus additional if desired)

– 1/4 red onion thinly sliced

– 1 cup grated mozzarella cheese

– 1/2 cup grated smoked gouda cheese

– 2 tablespoons roughly chopped fresh cilantro leaves

– 2 tablespoons unsalted butter

– fresh ground black pepper to taste

Instructions

1-Prep the pan: Line a baking dish with parchment paper, lightly sprayed with non-stick spray. Place bottom halves of the 12 slider buns in the dish. Snug fit is key!

2-Mix the chicken: Toss 4 cups cooked shredded chicken with 1/2 cup BBQ sauce until coated. Spread evenly over buns. Drizzle remaining 1/2 cup sauce on top. Extra if you love saucy, like me.

3-Add toppings: Sprinkle 1 cup grated mozzarella, thinly sliced 1/4 red onion, 1/2 cup grated smoked gouda, and 1 tablespoon chopped cilantro. Crack fresh black pepper to taste.

4-Top and cover: Add top bun halves. Cover dish tightly with foil.

5-Bake covered: Pop in the oven for 15 minutes. This melds flavors nicely.

6-Make butter mix: Melt 2 tablespoons unsalted butter, stir in remaining 1 tablespoon cilantro.

7-Final bake: Remove foil, brush buns with butter-cilantro mix. Bake uncovered 10 more minutes until golden and irresistible.

8-Serve: Immediately! Hot, gooey, perfect. Serves 12 sliders.
