Ingredients
12 ounces top sirloin, trimmed and thinly sliced against the grain
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon Shaoxing wine (or substitutes like mirin, dry sherry, or dry vermouth)
¼ teaspoon white pepper
½ small head broccoli, cut into bite-sized florets (~1 cup)
1 large carrot, sliced into thin strips (~1 cup)
1 small red onion, thinly sliced (~1.5 cups)
½ large red bell pepper, chopped (~1 cup)
3 4 mushrooms (white button or cremini), thinly sliced (~2 cups)
½ small napa cabbage, chopped (~2 cups)
Large handful snow peas (~¾ cup)
4 teaspoons grapeseed oil or high smoke point vegetable oil
Kosher salt and white pepper to season
¾ cup beef stock
1 tablespoon cornstarch
1 tablespoon dark brown sugar (can substitute regular brown sugar)
2 tablespoons oyster sauce
1 tablespoon soy sauce
2 teaspoons sesame oil, divided
2 cloves garlic, finely chopped or grated
Cooked white or brown rice (for serving, optional)
Sliced green onions (for serving, optional)
Toasted sesame seeds (for serving, optional)
Instructions
1-First: prepare all ingredients by slicing the beef into thin strips and chopping the vegetables uniformly for even cooking. Mince garlic and grate ginger, then mix soy sauce, broth, and cornstarch in a bowl to make the sauce. This step sets the stage, just like prepping for a family game night everything ready for action!
2-Second: heat a wok or large skillet over high heat and add sesame oil. Quickly stir-fry the beef strips for 2-3 minutes until just browned, then remove from the pan and set aside. It’s amazing how this keeps the beef tender and juicy, a trick I picked up from years of kitchen experiments.
3-Third: in the same pan, add garlic and ginger, stir-fry for 30 seconds. Then add carrots, broccoli, and bell peppers; cook for 3-4 minutes until vegetables are tender-crisp. I always start with the heartier veggies like in the directions it’s key for that perfect crunch without sogginess.
4-Fourth: return beef to the pan, pour in the prepared sauce, and stir continuously. Cook for 2-3 minutes until the sauce thickens and coats everything. Toss in the onions and other goodies for that final mix it’s like watching a symphony come together.
5-Fifth: adjust seasoning if needed, add sliced green onions, and give a final stir. For adaptations, use tofu or tempeh instead of beef and gluten-free soy sauce. Serve hot with steamed rice or noodles; cooking times might be shorter for plant-based options, making it flexible for any night.
Notes
🥩 Slightly freeze beef before slicing for thinner, even cuts.

🌡️ Use high smoke point oil like grapeseed for optimal stir-frying results.
