Ingredients

– 2 pounds stewing beef trimmed and cubed

– 3 tablespoons flour

– ½ teaspoon garlic powder

– ½ teaspoon salt

– ½ teaspoon black pepper

– 3 tablespoons olive oil (or more as needed)

– 1 chopped onion

– 6 cups beef broth

– ½ cup red wine (optional)

– 1 pound potatoes peeled and cubed

– 4 carrots cut into 1-inch pieces

– 4 ribs celery cut into 1-inch pieces

– 3 tablespoons tomato paste

– 1 teaspoon dried rosemary or 1 sprig fresh

– 2 tablespoons cornstarch (or as needed)

– 2 tablespoons water (or as needed)

– ¾ cup peas

Instructions

1-Toss the beef in a mixture of flour, garlic powder, salt, and pepper. This coats the meat for thickening and seasoning.

2-Heat olive oil in a large pot over medium-high heat and brown the beef in batches, then set aside. Browning builds that rich flavor everyone loves.

3-Sauté the chopped onion until softened, about 3 minutes. This step softens the base for better taste.

4-Add the beef broth and red wine, scraping the pan to loosen any browned bits. Those bits are flavor gold!

5-Return the beef to the pot and add potatoes, carrots, celery, tomato paste, and rosemary. Stir well.

6-Cover and simmer on medium-low heat for about 1 hour or until the beef is tender, up to 90 minutes. Low and slow makes it melt-in-your-mouth.

7-Create a slurry by mixing cornstarch with water and gradually add it to the boiling stew to thicken to your preference, allowing it to boil for 1-2 minutes after addition.

8-Stir in peas and simmer for another 5-10 minutes. Peas stay bright and crisp this way.

9-Season with additional salt and pepper to taste before serving.
