🍲 This creamy beef stroganoff brings restaurant‑quality comfort to your kitchen with a rich, velvety sauce.
🥩 Tender strips of sirloin quick‑sear and mingle with mushrooms for a protein‑packed dinner in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

– 1 lb (450 g) top-sirloin steak, thinly sliced against the grain

– 2 Tbsp neutral oil (e.g., vegetable or canola)

– 2 Tbsp unsalted butter

– 1/2 medium onion, finely chopped

– 1/2 lb (225 g) brown mushrooms, thickly sliced

– 1 clove garlic, minced

– 1 Tbsp all-purpose flour

– 1 cup (240 ml) beef broth

– 3/4 cup (180 ml) heavy whipping cream

– 1/4 cup (60 ml) sour cream

– 1 Tbsp Worcestershire sauce

– 1/2 tsp Dijon mustard

– 1/2 tsp salt (adjust to taste)

– 1/4 tsp ground black pepper

– Optional garnish: 1 Tbsp chopped green onion or fresh parsley

– Optional accompaniment: 8-12 oz (225-340 g) egg noodles, cooked according to package directions

Instructions

1-First, get everything ready by slicing the beef thinly and chopping the veggies. Heat oil in a large skillet over medium-high heat and sear the beef for about 1 minute per side until it’s browned but still pink inside. Set it aside to keep it tender.

2-Next, lower the heat and add butter to the pan. Toss in the onion and mushrooms, sautéing for 6-8 minutes until they’re soft and golden. Stir in the garlic and cook for another minute to bring out its aroma.

3-Then, sprinkle flour over the mix and stir for a minute to make a light roux. Pour in the beef broth and scrape up those tasty bits from the bottom of the pan. Add the heavy cream and let it simmer for 1-2 minutes until the sauce starts to thicken.

4-Now, temper the sour cream by mixing it with a bit of the hot sauce before adding it back in. Stir in Worcestershire sauce, Dijon mustard, salt, and pepper, then simmer for 2-3 minutes. Finally, return the beef to the skillet and heat through for 1-2 minutes without overcooking.

5-Serve your beef stroganoff over egg noodles and garnish with green onion or parsley. For a fun twist, try it with rice or even a simple chicken stir-fry side for variety. This step-by-step beef stroganoff recipe ensures a creamy sauce that coats everything perfectly.

Notes

🥩 Use a high‑quality cut such as top sirloin or ribeye and slice against the grain for maximum tenderness.
🔥 Sear the beef in batches; crowding the pan steams the meat instead of creating a rich brown crust.
🍶 Temper the sour cream before adding it to prevent curdling and keep the sauce silky smooth.
