Ingredients
– 1/2 cup blueberries, washed
– 1 tablespoon balsamic vinegar
– 1 teaspoon honey
– 4 slices artisan bread
– Handful of fresh basil
– Brie cheese, sliced (desired amount)
– Butter, room temperature
Instructions
1-In a small saucepan over medium heat, combine blueberries, balsamic vinegar, and honey. Stir and cook gently while mashing the blueberries until they soften and become jammy, about 5 minutes. Set aside.
2-Butter the outside of each bread slice. On the unbuttered side of one slice, spread a layer of the blueberry mixture, add basil, and 2 to 3 slices of brie (or desired amount). Top with another slice of bread, buttered side up. Repeat for the second sandwich.
3-Heat a skillet or grill pan over medium heat and cook sandwiches until both sides are golden brown and cheese is melted.
