  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

– 2 sheets puff pastry (store-bought or homemade)

– 8 oz. softened cream cheese for cream cheese filling

– 1/4 cup granulated sugar for cream cheese filling

– 1 large egg yolk for cream cheese filling

– 1 teaspoon lemon juice for cream cheese filling

– 1 teaspoon pure vanilla extract for cream cheese filling

– 2 cups (300 to 350 grams) blueberries, fresh or frozen

– 1 egg for egg wash

– 1/4 cup coarse sugar for sprinkling on top of pastry

– 2 tablespoons powdered sugar for dusting when serving

Instructions

1-Making blueberry puff pastry at home is simpler than it seems, starting with basic prep work. Begin by thawing the puff pastry at room temperature for 30 minutes to 1 hour or microwaving each sheet wrapped in paper towels for 15 seconds per side until it unfolds easily. Preheat your oven to 400Β°F to get everything ready for baking.

2-Prepare the cream cheese filling by beating 8 oz. softened cream cheese with 1/4 cup granulated sugar for 2 minutes, then mix in 1 large egg yolk, 1 teaspoon lemon juice, and 1 teaspoon pure vanilla extract until smooth. This step creates a creamy base that pairs wonderfully with the blueberries.

3-Assembling the Pastry: Once your ingredients are prepped, unfold the puff pastry sheets and gently roll them with a rolling pin a few times on each side. Place each sheet on parchment paper or a silicone mat for assembly. Spread half of the cream cheese filling in the center of each sheet, leaving about 1 inch at the top and bottom free of filling, and add half the blueberries on top of each portion.

4-Assembling the Pastry: Now, cut two vertical slits on the top and bottom of each pastry along the edges of the filling center. Fold the top edge over the filling, then cut slits diagonally from the filling edges to the top corners to remove triangle shapes and set them aside. Cut multiple diagonal slits, about 11 to 12, along each side for braiding, roughly 0.5 inches thick, and remove trapezoid shapes from the bottom edges.

5-Baking and Finishing: Braid the pastry by folding alternating strips from each side across the filling down to the bottom, tucking in the ends and trimming any excess dough. Transfer the assembled pastry on parchment to a baking sheet, whisk the egg for an egg wash, brush it over the pastry, and sprinkle with 1/4 cup coarse sugar for a nice crunch.

6-Baking and Finishing: Bake for 20 to 30 minutes until the pastry is puffed and golden brown, then cool for 10 to 15 minutes before dusting with 2 tablespoons powdered sugar for serving.
