12 oz bacon, cut into small pieces

1 sweet onion, finely diced

34 cloves garlic, finely minced

2/3 cup apple cider vinegar

56 tablespoons brown sugar

5 tablespoons bourbon

5 tablespoons water

Pinch of cayenne pepper

Cracked black pepper to taste

2 lbs ground beef (85/15 preferred)

1 small sweet onion

1 tablespoon heavy cream (optional)

Salt to taste

Pepper to taste

Green leaf lettuce

4 slices white American cheese or preferred cheese

Small amount of mayonnaise (optional)

4 brioche hamburger buns or preferred buns

Instructions

1-Cook bacon pieces: Cook bacon pieces in a large skillet over medium heat until crispy, about 8-12 minutes. Drain excess grease if needed, then add diced onion and minced garlic; cook until soft, around 3-5 minutes.

2-Stir in apple cider vinegar, brown sugar, bourbon, water, cayenne pepper, and black pepper: Bring to a boil, then simmer until thick and syrupy, roughly 10-15 minutes. You can use it right away or store it in an airtight container in the fridge for 2-4 weeks!

3-Heat a drizzle of olive oil in a large skillet: Toast hamburger buns, cut side down, until golden brown; set them aside.

4-In a bowl, combine ground beef, finely grated onion, heavy cream (if using), salt, and pepper: Mix gently and form into 4 patties, making an indentation in the center of each to prevent bulging.

5-Cook patties in the skillet over medium heat with a drizzle of oil: for about 5 minutes per side, or until they’re done to your liking.

6-During the last minute: place cheese slices on the patties and cover with foil to melt perfectly.

7-Assemble the burgers on the toasted buns with lettuce and that delicious bourbon bacon jam: Serve immediately for the best taste!
