Ingredients

– 16 large white mushrooms Provide a solid base, but you can also use button mushrooms and cremini mushrooms as alternatives.

– 8 oz Boursin cheese Or 150 grams of soft herbed cheese flavored with garlic and herbs for that creamy filling.

– 1 cup chopped mushroom stems From the mushrooms above, after removing and chopping them finely.

– 1/4 cup finely chopped onions For added sweetness, or 2 tablespoons finely chopped shallots as a variation.

– 2 cloves garlic, minced To bring in aromatic notes that enhance the overall flavor.

– 2 tablespoons olive oil Plus an extra 1 tablespoon for sautéing the mushroom stems.

– 1 teaspoon fresh thyme leaves To add a fragrant herb touch during cooking.

– 1/3 cup panko breadcrumbs For toasting and mixing into the filling to give it a light crunch.

– Salt and freshly ground black pepper to taste To balance and enhance all the flavors.

– Olive oil for drizzling A light amount to brush on before baking.

– Chopped parsley for garnishing Just a sprinkle to finish off the dish after baking.

Instructions

1-Preheat your oven: Preheat your oven to 400°F (200°C) and clean the mushrooms with a damp cloth.

2-Remove and chop the stems: Remove and chop the stems, setting aside 1 cup for the filling.

3-Sauté the chopped stems: Sauté the chopped stems in 1 tablespoon olive oil for 1 minute, then add 2 tablespoons finely chopped shallots and 1 teaspoon fresh thyme leaves, cooking for 2 minutes.

4-Add breadcrumbs: Add 1/3 cup panko breadcrumbs and toast for 2 to 3 minutes until lightly golden.

5-Mix and stuff: Mix in 150 grams of soft herbed cheese, then stuff each mushroom cap with this filling.

6-Bake the mushrooms: Arrange on a baking sheet, drizzle with olive oil, and bake for 12 to 13 minutes.

7-Garnish and serve: Garnish with chopped parsley and serve warm.

Notes

🍄 Clean mushrooms with a damp cloth rather than submerging in water to avoid excess moisture.
🧀 Prepare and fill mushrooms up to two days ahead, but bake just before serving.
