Ingredients
– 8 chicken drumsticks
– 1/2 cup all-purpose flour
– 3 eggs, beaten
– 1 cup panko breadcrumbs (or regular breadcrumbs as substitute)
– Canola oil spray (or other oil)
– 1 tablespoon dried oregano
– 1 tablespoon dried basil
– 1 teaspoon garlic powder
– 1 1/2 teaspoons smoked paprika
– 1 1/2 teaspoons cayenne pepper or pure chili powder (omit for kid-friendly)
– 1 1/2 teaspoons cooking salt
– 2 teaspoons black pepper (reduce to 1/2 teaspoon for kid-friendly)
Instructions
1-Preheat your oven to 200°C/400°F (or 180°C for fan ovens). Line a tray with foil and place a rack on top, then give it a quick spray with oil for easy cleanup and crisp results.
2-Set up three bowls: one with the flour, one with the beaten eggs, and one with the panko breadcrumbs mixed with the seasonings.
3-Mix all the seasonings in a small bowl first. Add 1 tablespoon to the flour and stir the rest into the panko this ensures every bite is packed with flavor!
4-Pat the 8 chicken drumsticks dry with paper towels to help the coating stick perfectly.
5-Coat each drumstick in the seasoned flour, shaking off any excess, then dip it into the beaten eggs, letting the extra drip off.
6-Press the drumstick into the seasoned panko breadcrumbs, making sure it’s fully covered, including the ends, for that all-over crunch.
7-Arrange the drumsticks on the rack with space between them, then spray them generously with oil to promote browning.
8-Bake for 25 minutes, flip them over, spray again with oil, and bake for another 20 minutes until they’re golden and super crunchy.
9-Let the drumsticks rest for 5 minutes before serving this step locks in that juicy goodness!

🍞 Panko breadcrumbs provide extra crispiness; regular breadcrumbs can be substituted.
🌶️ For a kid-friendly version, omit cayenne pepper and reduce black pepper to 1/2 teaspoon.
