– 1 cup raw walnut halves
– 1 cup packed pitted Medjool dates
– 3 tablespoons unsweetened cocoa powder
– 1 teaspoon vanilla extract
– 1/4 teaspoon mint or peppermint extract
– 1/8 teaspoon salt
Instructions
1-First, combine the walnuts and pitted dates in a food processor and blend until they form a combined mixture. This step creates a base that’s sticky and full of texture.
2-Then, add the cocoa powder, vanilla extract, mint extract, and salt, then process again until a dough forms.
3-If the mixture seems too dry, add a tablespoon of warm water to help it come together.
4-Once ready, scoop the mixture into portions using a cookie dough scoop and roll into balls.
5-Finally, chill the balls in the refrigerator for 30 minutes before storing them in an airtight container.
