– 1 tablespoon onion granules

– 2 teaspoons dried sage

– 2 teaspoons garlic granules

– 2 teaspoons salt

– 100 g crushed crisps or bacon rasher crisps

– 200 g cornmeal or ground polenta

– 200 g plain flour

– 2 teaspoons salt

– 2 teaspoons ground black pepper

– 2 teaspoons dried sage

– 2 teaspoons onion granules

– 1 teaspoon garlic granules

– 2 teaspoons sweet paprika

Instructions

1-Start your adventure with this recipe by preparing the marinade: Combine 568 ml buttermilk, 2 tablespoons cider vinegar, 1 tablespoon onion granules, 2 teaspoons dried sage, 2 teaspoons garlic granules, and 2 teaspoons salt in a large bowl. Submerge 20 pieces of bone-in, skin-on chicken and let it marinate overnight for the best flavor.

2-Next, crush 100 g crisps finely and mix with 200 g cornmeal, 200 g plain flour, 2 teaspoons salt, 2 teaspoons black pepper, 2 teaspoons dried sage, 2 teaspoons onion granules, 1 teaspoon garlic granules, and 2 teaspoons sweet paprika. Coat the drained chicken pieces evenly in this spiced mixture for that crispy texture.

3-Heat vegetable oil in a deep pan to 170°C and fry the chicken in batches of 3-4 pieces for 10-12 minutes until it reaches an internal temperature of 75°C.
