Ingredients

– 1 small butternut squash (about 2 to 2 1/2 pounds)

– 1 cup Pecan halves or chopped pecans

– 2 tablespoons Unsalted butter, melted

– 2 tablespoons Brown sugar, packed

– 1/8 teaspoon Ground cinnamon

– Marshmallows, large or small (optional)

Instructions

1-Start: Start by preheating your oven to 350Β°F and lining a baking sheet with parchment paper or aluminum foil. Cut the butternut squash in half lengthwise and remove the seeds, then place it cut side down on the sheet. Bake for about 45 minutes until tender, and let it cool enough to handle.

2-Next: Next, lightly spray a casserole dish with vegetable cooking spray. Scoop out the warm squash flesh and mash it smooth, then add the whole milk, vanilla extract, granulated sugar or brown sugar, melted unsalted butter, and ground cinnamon. Stir to combine and fold in the lightly beaten large eggs until blended some lumps are okay.

3-Pour: Pour the mixture into the dish and bake for about 30 minutes until almost set. While it bakes, mix the topping: combine the pecan halves or chopped pecans, melted unsalted butter, brown sugar, and ground cinnamon. Sprinkle this over the casserole and bake for another 15 minutes until set.
