Ingredients

– 6 ounces cherry tomatoes

– 1 shallot, peeled and sliced

– Β½ teaspoon fresh thyme (or fresh oregano or dried thyme)

– Β½ teaspoon salt

– ΒΌ teaspoon red pepper flakes

– Β½ cup softened butter at room temperature

– 2 ounces prosciutto

– 4 slices crusty bread (such as sourdough or baguette)

– 4 ounces grated gruyere cheese (substitutes: fontina, mozzarella, havarti, or Monterey Jack)

– 8 large eggs

– 1 tablespoon butter for scrambling eggs

– Salt and pepper to taste

– 1 tablespoon chopped chives

Instructions

1-First, preheat the broiler to high and arrange 6 ounces of cherry tomatoes and 1 sliced shallot in a single layer on a baking sheet. Broil for 12-15 minutes until they are charred and softened, then let them cool this step brings out amazing flavors.

2-Next, preheat the oven to 400 degrees Fahrenheit and line another baking sheet with parchment paper; lay 2 ounces of prosciutto slices on it and bake for 7-8 minutes until crispy, then break into small chunks and set aside.

3-In a food processor, combine the cooled tomatoes and shallots with Β½ teaspoon fresh thyme, Β½ teaspoon salt, and ΒΌ teaspoon red pepper flakes; puree until smooth, then add Β½ cup softened butter and blend until well combined. Spread this tomato shallot butter generously on 4 slices of crusty bread, top each with 4 ounces of grated gruyere cheese, place on a baking sheet, and bake for 3-4 minutes until the cheese melts. While that’s happening, beat 8 large eggs in a bowl, heat 1 tablespoon butter in a pan over medium heat, scramble the eggs to your desired doneness, and season with salt and pepper to taste.

4-Finally, remove the toasts from the oven, top with the scrambled eggs, sprinkle the crispy prosciutto, and finish with 1 tablespoon chopped chives. Serve immediately for the best taste and texture. This whole process takes about 30 minutes, including broiling, baking, and cooking steps, making it a breeze for busy days.
