Instructions
1-First, preheat the broiler to high and arrange 6 ounces of cherry tomatoes and 1 sliced shallot in a single layer on a baking sheet. Broil for 12-15 minutes until they are charred and softened, then let them cool this step brings out amazing flavors.

Spread this tomato shallot butter generously on 4 slices of crusty bread, top each with 4 ounces of grated gruyere cheese, place on a baking sheet, and bake for 3-4 minutes until the cheese melts. While that’s happening, beat 8 large eggs in a bowl, heat 1 tablespoon butter in a pan over medium heat, scramble the eggs to your desired doneness, and season with salt and pepper to taste.
4-Finally, remove the toasts from the oven, top with the scrambled eggs, sprinkle the crispy prosciutto, and finish with 1 tablespoon chopped chives. Serve immediately for the best taste and texture.
