Ingredients

– 1 pound of bite-size pasta such as fusilli, bowtie, rotini, or penne

– 2 tablespoons of olive oil

– 1 pound of peeled and deveined shrimp

– 1 pound of chicken thighs cut into 1-inch pieces

– 1 small yellow onion (about ¾ cup, chopped into ¼-inch pieces)

– 3 minced garlic cloves

– 2 chopped bell peppers (assorted colors, about 2 cups, chopped into ½-inch pieces)

– 1 cup of heavy cream

– 2 to 3 tablespoons of Cajun seasoning, adjusted to taste

– Tofu for vegan diets

– Gluten-free pasta or zucchini noodles for gluten-free diets

– Coconut milk for low-fat versions

– Veggie noodles for low-calorie option

Instructions

1-: First, prepare the pasta by boiling 1 pound of bite-size pasta in salted water until it’s al dente, then drain and set aside, reserving ½ cup of the water. Next, heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook the 1 pound of shrimp for 1-2 minutes per side until they’re pink, then set them aside. In the same skillet, add the remaining 1 tablespoon of olive oil and cook the 1 pound of chicken thighs with 1 tablespoon of Cajun seasoning for about 5 minutes until fully cooked.

2-: Adding Veggies and Building the Sauce Once the chicken is done, toss in the onions, garlic, and bell peppers, cooking them for 5 minutes until the onions soften. Add a splash of water to deglaze the pan, scraping up those tasty browned bits, and then transfer everything to the bowl with the shrimp. Pour in 1 cup of heavy cream, whisk in the remaining 1 to 2 tablespoons of Cajun seasoning, and let it simmer for 1-2 minutes to blend the flavors.

3-: Finally, mix the cooked pasta into the sauce, using the reserved pasta water as needed to get the consistency you want. Stir in the shrimp, chicken, and veggies, then serve it up hot with a sprinkle of fresh parsley if you have some on hand.
