  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

– 1 cup Stone-ground grits for creamy base

– 3 cups Chicken stock for creamy base

– 1 cup Milk for creamy base

– 1 tablespoon Butter for creamy base

– 1 teaspoon Salt for creamy base

– 3 slices Thick-cut bacon (cut into ½ inch strips) for protein and flavor

– 1 cup Chopped onion for protein and flavor

– ½ cup Chopped green pepper for protein and flavor

– 3 cloves Garlic, minced for protein and flavor

– 1¼ pounds Large shrimp (peeled and deveined, tails on) for protein and flavor

– 3-4 teaspoons Creole seasoning (to taste) for protein and flavor

– 2 tablespoons Butter for protein and flavor

– 1 heaping tablespoon Flour for protein and flavor

– 1 cup Chicken stock for protein and flavor

– 2 teaspoons Worcestershire sauce for protein and flavor

– Salt and pepper to taste for protein and flavor

Instructions

1-First, prepare all your ingredients by peeling and deveining the shrimp, mincing garlic, and chopping green onions. Measure out the grits, cheese, and seasonings to have everything ready.

2-Bring 4 cups of water or low-sodium chicken broth to a boil in a medium pot. Gradually whisk in the stone-ground grits and reduce heat to low.

3-Simmer gently, stirring often, until thick and creamy, about 25-30 minutes.

4-While grits cook, season shrimp with 2 tablespoons of Cajun seasoning. Heat a skillet over medium-high heat, melt 1 tablespoon butter, and sauté shrimp until pink and cooked through, about 2-3 minutes per side. Remove shrimp and set aside.

5-In the same skillet, melt the remaining butter and sauté garlic until fragrant, about 1 minute. Return shrimp to skillet, toss with garlic and green onions to combine.

6-When grits are creamy and cooked, stir in shredded sharp cheddar cheese until melted and smooth. Adjust seasoning with salt and pepper if needed.

7-Final Step: Plate the cheesy grits and top with the sautéed Cajun shrimp mixture. Garnish with additional green onions or parsley. Serve immediately.

Notes

🍳 Whisk grits frequently during cooking for a smooth, creamy texture.
🦐 Avoid overcooking shrimp to keep them tender and juicy.
🌶 Adjust spice level with additional hot sauce or Creole seasoning to suit your taste.
