Instructions
1-First, prepare all your ingredients by peeling and deveining the shrimp, mincing garlic, and chopping green onions. Measure out the grits, cheese, and seasonings to have everything ready.
2-Bring 4 cups of water or low-sodium chicken broth to a boil in a medium pot. Gradually whisk in the stone-ground grits and reduce heat to low.
3-Simmer gently, stirring often, until thick and creamy, about 25-30 minutes.
4-While grits cook, season shrimp with 2 tablespoons of Cajun seasoning. Heat a skillet over medium-high heat, melt 1 tablespoon butter, and sauté shrimp until pink and cooked through, about 2-3 minutes per side. Remove shrimp and set aside.
5-In the same skillet, melt the remaining butter and sauté garlic until fragrant, about 1 minute. Return shrimp to skillet, toss with garlic and green onions to combine.
6-When grits are creamy and cooked, stir in shredded sharp cheddar cheese until melted and smooth. Adjust seasoning with salt and pepper if needed.
7-Final Step: Plate the cheesy grits and top with the sautéed Cajun shrimp mixture. Garnish with additional green onions or parsley. Serve immediately.
