Instructions
1-First, prepare the crostini rounds according to their instructions; you can make them up to two days ahead and store them airtight.
2-Next, cook the caramelized onions if you haven’t already; they’re good in the fridge for up to two days.
3-Preheat your oven to 400°F to get everything set for baking.
4-Arrange the crostini on a baking sheet lined with a silicone mat for even heating.
5-Slice the brie cheese into 1/8-inch wide strips, keeping the rind on if you like, and cut them just a bit shorter than the crostini.
6-Place one strip of brie on each crostini, then add about 1/2 tablespoon of caramelized onions on top.
7-Sprinkle with dried thyme or rosemary if you want extra herb flavor.
8-Bake in the oven for 7 to 10 minutes until the brie starts to melt and everything looks golden.
