Ingredients

– 2 pounds skirt steak, trimmed of excess fat (outside skirt steak preferred; flank steak can be used as an alternative)

– 1 jalapeño, seeded and minced (seeds can be left in for extra heat or removed for milder flavor)

– 4 cloves garlic, minced (fresh garlic recommended)

– 1/2 cup fresh cilantro leaves, chopped (including tender stems)

– Juice of 1 orange (Valencia or navel preferred)

– Juice of 1 lime

– Juice of 1 lemon

– 2 tablespoons apple cider vinegar (white vinegar may be used instead)

– 1/3 cup olive oil (extra-virgin preferred)

– 1 teaspoon ground cumin

– 1 teaspoon kosher salt

– 1/4 teaspoon freshly ground black pepper

Instructions

1-First, gather all ingredients and measure them accurately. This ensures your marinade has the right balance for tenderizing the meat. Fresh items like garlic and cilantro make a big difference in the final taste.

2-Next, in a large glass dish, whisk together the marinade ingredients: 1 jalapeño (seeded and minced), 4 cloves garlic (minced), 1/2 cup fresh cilantro leaves (chopped), juice of 1 orange, juice of 1 lime, juice of 1 lemon, 2 tablespoons apple cider vinegar, 1/3 cup olive oil, 1 teaspoon ground cumin, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper.

3-Then, place the 2 pounds of skirt steak in a single layer in the dish, turning to coat it well with the marinade. Cover and refrigerate for at least 1 hour and up to 8 hours to let the flavors soak in deeply.

4-After marinating, preheat the grill to medium-high heat. Grill the steak for 7 to 10 minutes per side for medium-rare, or 10 to 12 minutes for medium doneness, turning only once.

5-Once done, remove the steak from the grill and let it rest for 5 minutes before slicing. Finally, slice the steak thinly across the grain and serve it up with your favorite sides.

Notes

🥩 Use outside skirt steak for the most authentic flavor and texture, but flank steak makes a great substitute if needed
