3 eggs, room temperature
1 ½ cups corn syrup
¾ cup light brown sugar, packed, packed
2 teaspoons vanilla extract
¼ teaspoon ground cinnamon
⅛ teaspoon ground allspice
½ teaspoon kosher salt
2 cups pecans, chopped

For the Cobbler
1 ½ cups all purpose flour
1 tablespoon baking powder
½ cup sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground ginger
⅛ teaspoon ground cloves
½ teaspoon kosher salt
8 tablespoons unsalted butter, cold
¾ cup buttermilk
1 teaspoon vanilla extract
1 ½ cups carrots, finely ground or very finely shredded

Instructions

1-Preheat the oven to 375°F: Preheat the oven to 375°F. Butter a 7×10 baking dish, making sure it is at least 2 ½ inches deep.
2-In a large bowl, whisk together the: In a large bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, cinnamon, allspice, and salt until smooth. Stir in the chopped pecans.
3-Pour the pecan filling into the prepared: Pour the pecan filling into the prepared baking dish.
