🌿 This easy-to-make dressing combines wholesome ingredients for a healthy option that can also enhance veggies, rice, and tofu dishes.

Ingredients

– ⅓ cup extra-virgin olive oil

– ⅓ cup rice vinegar

– 2 large carrots, peeled and roughly chopped (about ⅔ cup)

– 2 tablespoons peeled and roughly chopped fresh ginger

– 2 tablespoons lime juice

– 1 tablespoon plus 1 teaspoon honey

– 1 ½ teaspoons toasted sesame oil

– ¼ teaspoon salt, more to taste

Instructions

1-Wash, peel, and roughly chop the carrots and ginger as specified to prepare them for blending.

2-Measure out each ingredient carefully: ⅓ cup extra-virgin olive oil, ⅓ cup rice vinegar, about ⅔ cup chopped carrots, 2 tablespoons ginger, 2 tablespoons lime juice, 1 tablespoon plus 1 teaspoon honey, 1 ½ teaspoons toasted sesame oil, and ¼ teaspoon salt.

3-Add all the ingredients into a blender for easy mixing.

4-Blend on high speed until the mixture is completely smooth, which usually takes about a minute.

5-Taste the dressing and add more salt or honey if it needs adjustment for your preference.

6-Once blended, serve it right away or store it in the fridge for later use.
