Ingredients

– 350 g (12 oz) bacon, chopped

– 250 g (8 oz) cream cheese, softened

– 1 cup sour cream (preferably full fat)

– 3/4 cup mayonnaise

– 1 tsp garlic powder (or substitute onion powder)

– 1 cup shredded tasty or cheddar cheese

– 1 cup shredded mozzarella cheese

– 1 cup chopped shallots or scallions (about 4-5 stalks)

– 1 round cob bread (sourdough works best) for the bread bowl

– 5 plain savory crackers, crushed for topping

– Oil spray for the topping

– Crackers, chips, or toasted bread to serve

Instructions

1-First, cook the 350 g (12 oz) chopped bacon in a non-stick skillet over high heat until it’s browned and crispy don’t forget to drain it on paper towels to remove excess grease.

2-In a heatproof bowl, mix the 250 g (8 oz) softened cream cheese, 1 cup sour cream, 3/4 cup mayonnaise, and 1 tsp garlic powder until it’s all smooth and creamy.

3-Next, stir in most of the cooked bacon, all of the 1 cup shredded tasty or cheddar cheese, 1 cup shredded mozzarella cheese, and most of the 1 cup chopped shallots.

4-Microwave this mixture on high for 3 minutes, then stir well if any cheese oil separates it’s a quick way to get that melty goodness without turning on the oven yet.

5-For the bread bowl option, cut a circle from the top of the 1 round cob bread and hollow it out, then pour in the dip mixture, sprinkle on the crushed 5 plain savory crackers, spray with oil, and bake at 180Β°C (350Β°F) for 20 minutes until it’s golden and bubbly.

6-Finish by adding the remaining bacon and shallots on top and serving it warm with crackers, chips, or toasted bread.

Notes

πŸ§€ Use a mix of flavorful cheeses like cheddar for taste and mozzarella for stretchiness.
🍞 Crushed crackers on top prevent drying and add a delightful crunch.
πŸ”₯ Serve the dip warm for creamy texture; it will firm up as it cools.
