🧀 This Cheesy Beef and Potato Burrito recipe is perfect for a satisfying and flavorful meal that’s easy to prepare.

  • Total Time: 45 minutes
  • Yield: 5 burritos 1x

Ingredients

Scale

3 large potatoes

Olive oil for coating potatoes

Salt for seasoning potatoes, plus 1/2 teaspoon for beef

Pepper for seasoning potatoes, plus 1/2 teaspoon for beef

Garlic powder for seasoning potatoes

1 lb ground beef

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon dried cilantro

1 teaspoon paprika plus additional for potatoes

1/2 cup water

1 tablespoon minced garlic

Nacho cheese sauce

5 burrito-size flour tortillas

Taco sauce

Instructions

1-First, start by peeling, washing, and cutting 3 large potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika until they’re well coated. Cook these in an air fryer at 400°F (200°C) for 25 minutes, shaking occasionally for even crispiness, or bake them in an oven at 400°F (200°C) for 30 minutes.

2-Next, in a skillet over medium-high heat, cook 1 lb ground beef with 1/2 teaspoon salt, 1/2 teaspoon pepper, 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon dried cilantro, 1 teaspoon paprika, and 1 tablespoon minced garlic. Once browned, drain any excess grease if needed, then add 1/2 cup water, stir it in, and keep the mixture warm on low heat.

3-Then, warm your 5 burrito-size flour tortillas and the nacho cheese sauce. To assemble, lay a tortilla flat, spread on some nacho cheese sauce, add a scoop of the ground beef mixture, a bit of taco sauce, the crispy potatoes, and more nacho cheese sauce on top. Roll it carefully into a burrito shape.

4-Finally, cook the assembled burritos in a skillet over medium-high heat until they’re golden brown on all sides. Serve them right away for the best taste, or save some for later as they reheat well.

Notes

🍗 Substitute ground beef with chicken breast cubes for a lighter option.
🌶 Use a taco seasoning packet for convenience instead of individual spices.
🌯 Warm tortillas to make rolling burritos easier and prevent cracking.
