Instructions
1-First: heat 1 tablespoon of olive oil in a pan over medium heat. This sets the base for sautéing your veggies and meat, bringing out those tasty taco vibes quickly.
2-Next: add 1/2 cup of chopped onion and 2 1/2 cups of cubed potatoes to the pan. Stir them around until the onions soften and everything smells amazing, which takes just a few minutes.
3-Add 1 pound of ground beef or turkey and cook until it’s browned, then drain any extra grease if you like.
4-Mix in 1 packet of low sodium taco seasoning and 10 ounces of diced tomatoes with green chiles, including the liquids, for that extra zing.
