Instructions
1-Prepare the crust: Mix 1 ½ cups graham cracker crumbs, ¼ cup granulated sugar, and ½ cup melted unsalted butter. Press evenly into the pan. Bake at 325°F (163°C) for 10 minutes until golden. Cool completely.
2-Make the filling: Beat 3 packages (8 oz each) softened cream cheese with 1 cup granulated sugar and 1 teaspoon vanilla extract until smooth.
3-Add 3 large eggs one at a time, mixing well after each.
4-Incorporate ¼ cup fresh lemon juice, ¼ cup fresh lime juice, 1 tablespoon lemon zest, 1 tablespoon lime zest, ½ cup chopped pistachios, and ½ cup chopped cherries. Stir gently to combine.
5-Assemble and bake: Pour batter over cooled crust. Bake at 325°F (163°C) for 50-60 minutes until edges set and center jiggles slightly.
6-Cool properly: Turn off oven, leave door ajar for 1 hour to prevent cracks. Cool to room temperature, then refrigerate 4 hours or overnight.
7-Serve: Top with whipped cream, whole cherries, and chopped pistachios. Slice into bars.
