2 tablespoons of canola oil

3 finely chopped garlic cloves

1 seeded and finely chopped jalapeño

1 large diced onion

3 cups of shredded cooked chicken

2 cans (4 ounces each) of diced green chiles

1/2 teaspoon paprika

Kosher salt and black pepper to taste

3 cans (10 ounces each) of green enchilada sauce

2/3 cup sour cream

18 corn tortillas cut in half

3 cups grated monterey jack cheese (about 12 ounces)

Fresh chopped cilantro for serving

Instructions

1-First, heat the oil in a skillet over medium heat and sauté the garlic, jalapeño, and onion until they soften and release their aromas this takes just a few minutes. Add the shredded cooked chicken, diced green chiles, paprika, salt, and pepper, stirring everything together for even flavor. Then, pour in most of the enchilada sauce, reserving about 1/2 cup, and heat the mixture through until it’s warm and combined.

2-Remove the skillet from the heat and stir in the sour cream to create a creamy filling. Spread the reserved sauce evenly in a 9-by-13-inch baking dish to form the base. Now, layer the halved corn tortillas, chicken mixture, and grated Monterey Jack cheese, repeating this process three times for a hearty build.

3-Bake the assembled casserole in the preheated oven until it’s bubbling and golden brown, which usually takes 30 to 35 minutes. Let it rest for 10 minutes before serving to make slicing easier. For a twist, try our chicken enchilada rice casserole for a different take on this classic.
