1 1/2 lbs chicken breasts (about 3 large)

2 large eggs

1/3 cup mayonnaise

1/3 cup all-purpose flour (can substitute cornstarch or potato starch for gluten-free options)

4 oz mozzarella cheese, shredded (about 1 1/3 cups)

1 1/2 tablespoons chopped fresh dill

1/2 teaspoon salt (or to taste)

1/8 teaspoon black pepper

2 tablespoons high heat cooking oil for sautéing

1/3 cup mayonnaise

1 garlic clove, pressed

1/2 tablespoon lemon juice

1/4 teaspoon Dijon mustard

1/8 teaspoon black pepper

Instructions

1-Dice the chicken: Dice the chicken into 1/3 inch pieces; slightly frozen chicken is easier to slice. Place it in a large bowl.

2-Add the eggs: Add the eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and pepper to the chicken. Mix everything well until combined.

3-Cover the bowl and refrigerate: Cover the bowl and refrigerate the mixture for 2 hours or overnight. This step boosts the flavor and keeps the fritters juicy trust me, it’s worth the wait!

4-Heat oil: Heat 2 tablespoons of oil in a large non-stick skillet over medium heat.

5-Drop mixture into pan: Drop heaping tablespoons of the mixture into the pan and slightly flatten the tops. Cook for 3-4 minutes on the first side until golden brown.

6-Flip the fritters: Flip the fritters and cook for another 3 minutes until they’re cooked through.

7-Repeat cooking: Repeat with the remaining mixture, adding more oil if needed.

8-Prepare the aioli: Prepare the aioli by mixing all the dip ingredients until smooth.

9-Test doneness: Test doneness by cutting a fritter in half; the chicken should be white inside.
