Ingredients
– 450g (1 lb) boneless, skinless chicken breasts
– 1 tablespoon Cajun-style seasoning (or to taste)
– 1 teaspoon garlic salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon red pepper flakes (or to taste)
– 2 tablespoons butter
– 1 tablespoon olive oil
– 1/2 cup diced jalapeno peppers (seeds removed) (about 2-3 medium peppers)
– 1 cup shredded Monterey jack cheese (about 115g)
– 115g (4 oz / 1/2 block) cream cheese, softened
– 6-8 strips crispy bacon strips, cooked and crumbled
– 12-15 egg roll wrappers
– Approximately 2-3 cups vegetable oil for frying (enough for 1/2 inch depth in pan)
Instructions
1-First: season your chicken breasts with 1 tablespoon of Cajun-style seasoning, 1 teaspoon of garlic salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes for that extra kick.
2-Next, heat 1 tablespoon of olive oil in a skillet over medium-high heat, add the chicken, and sear it for 2-3 minutes on each side to lock in the flavors.
3-Then, reduce the heat to low, add 2 tablespoons of butter, cover the pan, and cook for about 10 minutes until the chicken is fully done.
4-Let it cool a bit, then shred it using two forks and mix it in a bowl with 1/2 cup of diced jalapenos, 1 cup of shredded Monterey jack cheese, 115g of softened cream cheese, and 6-8 strips of crumbled bacon.
5-Now, scoop about 2 tablespoons of this filling onto the center of each egg roll wrapper, moisten the edges with a little water, and roll them up tightly, tucking in the sides as you go.
6-Heat your vegetable oil to about 1/2 inch deep in a pan over medium-high heat, then fry the egg rolls in batches for 2-3 minutes, turning them until they’re golden and crispy.
7-Drain them on paper towels and serve warm it’s that simple! If you prefer baking, try it at 400°F (205°C) for 15-20 minutes for a healthier twist.
