Ingredients

– 1 lb chicken breasts (2 medium)

– ½ tsp garlic salt (or to taste)

– ⅛ tsp black pepper (or to taste)

– 2 tsp olive oil for cooking chicken

– 6 cups romaine lettuce (1 head), rinsed, chopped, and spun dry

– ½ cup cherry tomatoes, halved

– ½ English cucumber, sliced

– ½ small purple onion, thinly sliced

– 1 mango, pitted, peeled, and diced

– 1 avocado, pitted, peeled, and diced

– ¼ cup chopped cilantro (optional)

– ½ cup toasted almonds

– ½ cup olive oil

– 3 tbsp apple cider vinegar

– 2 tsp honey

– 2 tsp Dijon mustard

– 1 garlic clove, minced (1 tsp)

– 1 tsp salt

– ¼ tsp black pepper (or to taste)

Instructions

1-First, start by preparing the chicken it’s the heart of the salad. Cut 1 lb of chicken breasts lengthwise and season with ½ tsp garlic salt and ⅛ tsp black pepper. Sauté them in 2 tsp olive oil over medium-high heat for 3 minutes per side until they reach 165°F inside. Let them rest for 5 minutes, then slice against the grain for juicy pieces.

2-Next, assemble the salad in a large bowl with 6 cups of chopped romaine lettuce as your base. Add ½ cup halved cherry tomatoes, ½ sliced English cucumber, 1 diced mango, 1 diced avocado, ½ thinly sliced purple onion, and ¼ cup chopped cilantro if you like. For the dressing, mix ½ cup olive oil, 3 tbsp apple cider vinegar, 2 tsp honey, 2 tsp Dijon mustard, 1 minced garlic clove, 1 tsp salt, and ¼ tsp black pepper in a jar and shake until smooth.

3-Finally, drizzle the dressing over your salad and toss gently, then top with ½ cup toasted almonds. The whole process takes about 20 minutes prep and 10 minutes cooking, for a total of 30 minutes.
